Ingredients
- 4 large tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup plain Greek yogurt
- 2 tablespoons tahini
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
Instructions

Preheat the oven to 400°F (200°C).

Slice the tomatoes in half and place them cut-side up on a baking sheet.

Drizzle the tomatoes with olive oil and sprinkle with oregano, salt, and black pepper.

Roast the tomatoes in the preheated oven for 20-25 minutes, or until they are slightly softened and starting to brown on top.

In a small bowl, whisk together the Greek yogurt, tahini, minced garlic, and lemon juice until smooth and creamy.

Once the tomatoes are roasted, remove them from the oven and let cool slightly.

Drizzle the tahini yogurt sauce over the roasted tomatoes and sprinkle with chopped fresh parsley.
