- 1.5 pounds new potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup crème fraîche
- 1 tablespoon finely chopped fresh chives
- 1 teaspoon lime juice
- 1/2 teaspoon chili powder
Instructions

Preheat the oven to 425°F (220°C).

Wash the new potatoes and pat them dry. Cut any larger potatoes in half.

In a large bowl, toss the potatoes with olive oil, salt, and black pepper until well coated.

Spread the potatoes in a single layer on a baking sheet.

Roast in the preheated oven for 25-30 minutes or until the potatoes are golden brown and crispy.

In the meantime, prepare the chilli crème fraîche by mixing crème fraîche, chopped chives, lime juice, and chili powder in a small bowl.

Once the potatoes are roasted, transfer them to a serving dish and drizzle the chilli crème fraîche over the top.
