- 4 large potatoes, peeled and cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 425°F (220°C).

Place the potato chunks in a large pot of salted water. Bring to a boil and cook for 5 minutes. Drain well.

In a large mixing bowl, combine the olive oil, paprika, salt, and pepper. Add the drained potatoes and toss until well coated.

Transfer the potatoes to a baking sheet and spread them out in a single layer.

Roast in the preheated oven for 40-45 minutes, turning halfway through, until the potatoes are golden and crispy.

Remove from the oven and sprinkle with fresh parsley.
