Ingredients
- 1 lb gnocchi
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp dried thyme
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
- Fresh parsley, for garnish
Instructions

Preheat oven to 425°F (220°C).

In a large bowl, toss together gnocchi, mushrooms, garlic, olive oil, balsamic vinegar, thyme, salt, and pepper.

Spread mixture onto a baking sheet in an even layer.

Roast in the preheated oven for 20-25 minutes, stirring halfway through, until gnocchi is golden and mushrooms are tender.

Remove from oven and serve hot, sprinkled with grated Parmesan cheese and garnished with fresh parsley.
