How To Make Roast Garlic & Tahini Spinach

Ingredients
- 4 cups fresh spinach leaves
- 4 cloves of garlic
- 2 tablespoons tahini
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Place the garlic cloves with their skins on a baking sheet. Roast them in the oven for 10 minutes until they are soft and fragrant.

Remove the garlic cloves from the oven and let them cool. Once cooled, squeeze the roasted garlic cloves out of their skins and mash them into a paste.

In a large skillet, heat olive oil over medium heat. Add the mashed garlic paste and cook for 1 minute until fragrant.

Add the spinach leaves to the skillet and sauté until wilted, about 3-5 minutes.

Remove the skillet from heat and stir in the tahini. Season with salt and pepper to taste.

Serve the roast garlic and tahini spinach as a side dish alongside your main course.
