How To Make Roast Aubergine with Goat’s Cheese & Toasted Flatbread

Ingredients
- 2 large aubergines
- 200g goat’s cheese
- 4 flatbreads
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 200°C (400°F).

Slice the aubergines in half lengthwise and score the flesh diagonally.

Place them on a baking tray, drizzle with olive oil, and sprinkle with minced garlic, smoked paprika, salt, and pepper.

Roast in the preheated oven for 25-30 minutes, until the flesh is soft and golden.

While the aubergines are roasting, brush the flatbreads with olive oil and toast them in a separate pan until crispy.

Once the aubergines are cooked, remove from the oven and crumble goat’s cheese over each half.

Return them to the oven for an additional 5 minutes, until the cheese is melted and slightly golden.

Serve the roasted aubergines with toasted flatbread and garnish with fresh parsley.
