How To Make Red Lentil & Sweet Potato Pâté

Ingredients
- 1 cup red lentils
- 1 large sweet potato, peeled and diced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups vegetable broth
- Juice of 1/2 lemon
- Fresh cilantro for garnish
Instructions

Rinse the red lentils under cold water and drain.

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the diced sweet potato, red lentils, cumin, paprika, turmeric, cinnamon, salt, and pepper to the pot. Stir to coat the ingredients with the spices.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low and simmer for about 20 minutes, or until the lentils and sweet potatoes are soft and cooked through.

Remove the pot from the heat and let it cool slightly. Use an immersion blender or transfer the mixture to a blender and blend until smooth and creamy.

Stir in the lemon juice and adjust the seasoning if needed.

Transfer the pâté to a serving dish and garnish with fresh cilantro.
