How To Make Red Cabbage with Port, Prunes & Orange

Ingredients
- 1 small red cabbage, thinly sliced
- 1 onion, thinly sliced
- 1 Granny Smith apple, peeled, cored, and chopped
- 1 cup port wine
- 1 cup chicken or vegetable broth
- 1 cup pitted prunes
- 2 oranges, zest and juice
- 2 tablespoons brown sugar
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- Salt and black pepper to taste
Instructions

In a large pot, heat olive oil over medium heat. Add onions and cook until softened, about 5 minutes.

Add red cabbage and apple to the pot, and stir well.

Pour in the port wine, chicken or vegetable broth, orange zest, orange juice, brown sugar, and red wine vinegar.

Stir in the prunes, then season with salt and black pepper.

Reduce heat to low, cover, and simmer for 1 hour, stirring occasionally.

Serve hot, garnished with additional orange zest if desired.
