Serves:
Ingredients
- 4 red bell peppers
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of dried oregano
- 1/4 teaspoon of red pepper flakes (optional)
- 1/4 cup of grated Parmesan cheese (optional)
Instructions
-
Preheat the broiler in your oven.
-
Place the red bell peppers on a baking sheet and broil them until the skin is blackened and blistered, turning occasionally. This will take about 10-12 minutes.
-
Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let the peppers steam for 10 minutes. This will make the skin peel off easily.
-
After 10 minutes, remove the plastic wrap and peel off the skin from the peppers. Remove the seeds and stems as well.
-
Place the peeled peppers, garlic cloves, olive oil, salt, black pepper, dried oregano, and red pepper flakes (if using) in a blender or food processor.
-
Blend until smooth and creamy.
-
If desired, stir in the grated Parmesan cheese for added flavor.
-
Serve the roasted red pepper sauce over pasta, grilled chicken, or as a dip for vegetables.
-
Enjoy!
