Ingredients
- 8 large tomatoes, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions

In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Cook until the vegetables are softened, about 5 minutes.

Add the diced tomatoes, vegetable broth, dried basil, dried oregano, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth.

Return the soup to the pot and heat over medium heat until warmed through. Season with additional salt and pepper if needed.
