Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter, melted
- 1/2 cup milk
- 1/4 cup strong brewed coffee
- 1 tsp vanilla extract
- 1 cup fresh raspberries
Instructions

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, mix together the melted butter, milk, coffee, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Gently fold in the fresh raspberries.

Divide the batter evenly among the muffin cups, filling them about 3/4 full.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
