Ingredients
- 8 rice paper sheets
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 avocado, sliced
- 1 cup of fresh mint leaves
- 1 cup of fresh cilantro leaves
- 1 cup of shredded purple cabbage
- 1/4 cup of roasted peanuts, crushed
Instructions

Fill a large bowl with warm water. Dip one rice paper sheet into the water until softened, about 10-15 seconds.

Carefully transfer the softened rice paper sheet onto a clean work surface.

Place a small handful of each vegetable and herb in the center of the rice paper sheet.

Fold the bottom half of the rice paper sheet over the filling, then fold in the sides, and roll tightly upwards to seal.

Repeat steps 1-4 with the remaining rice paper sheets and filling ingredients.

Serve the rainbow rice paper rolls with a side of peanut dipping sauce or sweet chili sauce.
