How To Make Quinoa Tabbouleh

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

Rinse the quinoa under cold water and drain well.

In a medium saucepan, bring the water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed. Remove from heat and let it cool.

In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and mint.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine.

Serve chilled or at room temperature. Enjoy!
