How To Make Quinoa, Goat’s Cheese & Peach Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 2 ripe peaches, sliced
- 4 oz goat’s cheese, crumbled
- ¼ cup chopped fresh basil
- ¼ cup chopped fresh mint
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions

Rinse the quinoa under cold water, then add it to a pot with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes or until the quinoa is tender. Drain any excess water and set aside to cool.

In a large bowl, combine the cooked quinoa, sliced peaches, goat’s cheese, basil, and mint.

In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the quinoa mixture and gently toss to combine.

Serve the salad chilled or at room temperature.
