Ingredients
- 4 medium potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 4 cups of mixed greens (such as kale, spinach, or Swiss chard), chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 4 eggs
Instructions

Heat olive oil in a large skillet over medium heat. Add the diced potatoes and cook for about 10 minutes, until they start to brown and become crispy.

Add the diced onions and minced garlic to the skillet and cook for another 5 minutes, until the onions are translucent.

Stir in the chopped greens, salt, black pepper, and paprika. Cook for an additional 5 minutes, until the greens are wilted and tender.

Make four wells in the mixture and crack an egg into each well. Cook for 5-7 minutes, until the egg whites are set but the yolks are still slightly runny.

Serve the potato hash with greens hot, garnished with additional salt and pepper if desired.
