Ingredients
- 2 cups all-purpose flour
- 1 cup mashed potatoes
- 1/4 cup olive oil
- 2 tsp active dry yeast
- 1 tsp salt
- 1 tsp sugar
- 1 tbsp dried rosemary
- 1 tbsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions

In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for 5 minutes until frothy.

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture, mashed potatoes, and olive oil. Mix until a soft dough forms.

Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

Preheat the oven to 425°F (220°C). Punch down the dough and transfer it to a greased baking sheet. Press the dough evenly into the pan.

In a small bowl, mix together the dried rosemary, dried thyme, garlic powder, onion powder, salt, and pepper. Sprinkle the herb mixture over the dough, pressing it lightly to adhere.

Bake in the preheated oven for 20-25 minutes or until golden brown and cooked through.

Remove from the oven and let it cool slightly before slicing and serving.
