Ingredients
- 4 medium-sized potatoes, boiled and diced
- 2 ripe avocados, peeled and diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno pepper, seeded and finely chopped
- Juice of 1 lime
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions

In a large bowl, combine the diced potatoes, avocados, red onion, cilantro, and jalapeno pepper.

In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.

Pour the dressing over the potato and avocado mixture, and gently toss until well coated.
