How To Make Polenta Pizza with Purple Sprouting Broccoli & Mozzarella

Ingredients

  • 1 cup polenta
  • 4 cups water
  • 1 tsp salt
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 2 cups purple sprouting broccoli, chopped
  • 1 cup mozzarella cheese, shredded
  • Fresh basil leaves, for garnish

Instructions

  1. In a large saucepan, bring the water to a boil. Slowly whisk in the polenta and salt, then reduce heat to low. Cook for 15 minutes, stirring constantly, until thickened.

  2. Pour the cooked polenta onto a greased baking sheet and spread it evenly to form a crust. Let it cool and set for about 10 minutes.

  3. Preheat the oven to 425°F (220°C).

  4. In a skillet, heat the olive oil over medium heat. Add the minced garlic and purple sprouting broccoli. Sauté for about 5 minutes, until the broccoli is tender.

  5. Spread the sautéed broccoli evenly over the polenta crust. Top with shredded mozzarella cheese.

  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

  7. Remove from the oven and let it cool slightly before slicing. Garnish with fresh basil leaves.

  8. Serve the polenta pizza hot and enjoy!
