Ingredients
- 1 cup fresh or frozen peas
- 1/4 cup fresh mint leaves, chopped
- 4 eggs
- 1 cup milk
- 1/2 cup crumbled goat’s cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pre-made pie crust
Instructions

Preheat the oven to 375°F (190°C).

In a saucepan, boil the peas in salted water for 2-3 minutes, then drain and set aside.

In a bowl, whisk together the eggs, milk, salt, and black pepper.

Place the pre-made pie crust into a greased 9-inch quiche pan.

Spread the peas, mint, and crumbled goat’s cheese evenly over the pie crust.

Pour the egg mixture over the ingredients in the quiche pan.

Bake in the preheated oven for 40-45 minutes, or until the quiche is set and golden brown.

Allow the quiche to cool for a few minutes before serving.
