Ingredients
- 2 cups fresh or frozen peas
- 1 clove garlic, minced
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: chopped fresh herbs, olive oil, or a sprinkle of paprika
Instructions

If using fresh peas, blanch them in boiling water for 2 minutes, then transfer to an ice bath to cool. If using frozen peas, thaw them according to package instructions.

In a food processor, combine the peas, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper. Blend until smooth and creamy, adding a splash of water if needed to achieve desired consistency.

Taste and adjust seasonings as desired.

Transfer the pea hummus to a serving bowl and top with your choice of optional toppings.
