How To Make Oven-baked Ratatouille & Sausages

Ingredients
- 1 large eggplant, diced
- 2 zucchinis, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, thinly sliced
- 4 sausages of your choice
- 3 tbsp olive oil
- 3 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh basil leaves, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a large baking dish, combine the diced eggplant, sliced zucchinis, red and yellow bell peppers, and onion.

Drizzle the olive oil over the vegetables and sprinkle with minced garlic, dried thyme, dried oregano, salt, and black pepper. Toss everything together to coat evenly.

Place the sausages on top of the vegetables.

Bake in the preheated oven for 40-45 minutes, or until the vegetables are tender and the sausages are cooked through.

Remove from the oven and garnish with fresh basil leaves before serving.
