Ingredients
- 8 oz orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 8 oz fresh mozzarella, diced
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- salt and pepper, to taste
Instructions

Cook the orzo pasta according to package instructions. Drain and rinse under cold water.

In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, black olives, red onion, basil, and fresh mozzarella.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.

Pour the dressing over the salad and toss to combine.
