Ingredients
- 1 cup giant couscous
- 2 oranges, segmented
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced red onions
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions

Cook the giant couscous according to the package instructions. Drain and set aside to cool.

In a large bowl, combine the cooled couscous, orange segments, feta cheese, red onions, and fresh parsley.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the couscous mixture and toss gently to combine.

Serve the salad chilled or at room temperature.
