Ingredients
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1/2 cup finely chopped onion
- 1 1/4 cups buttermilk
- 1/4 cup unsalted butter, melted
- 1/4 cup chopped fresh parsley
- 1/4 cup whipped English mustard butter (recipe below)
Instructions

Preheat the oven to 375°F (190°C). Grease a baking sheet or line with parchment paper.

In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, and salt. Stir in the chopped onion.

Make a well in the center of the dry ingredients and pour in the buttermilk and melted butter. Mix until just combined.

Turn the dough out onto a lightly floured surface and knead for about 1 minute, until it comes together. Shape the dough into a round loaf and place it on the prepared baking sheet.

Use a sharp knife to score a deep cross on the top of the loaf. This helps the bread cook evenly.

Bake for 40-45 minutes, until the loaf is golden brown and sounds hollow when tapped on the bottom. Remove from the oven and transfer to a wire rack to cool.

Once the bread has cooled, slice it and serve with a dollop of whipped English mustard butter and a sprinkle of fresh parsley.
