Ingredients
- 1 lb new potatoes, halved
- 4 cups frisée lettuce, torn into bite-sized pieces
- 1/4 cup red onion, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh dill, chopped
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Salt and pepper to taste
Instructions

Place the new potatoes in a pot of salted boiling water and cook until tender, about 15-20 minutes. Drain and allow to cool slightly.

In a large bowl, combine the frisée lettuce, red onion, cherry tomatoes, feta cheese, and fresh dill.

Add the cooked new potatoes to the salad bowl.

In a small bowl, whisk together the olive oil, white wine vinegar, salt, and pepper.

Pour the dressing over the salad and toss to combine.
