Ingredients
- 2 cups of mushrooms, finely chopped
- 1 cup of cooked quinoa
- 1/2 cup of bread crumbs
- 1/4 cup of grated Parmesan cheese
- 1/4 cup of chopped onions
- 2 cloves of garlic, minced
- 1 tsp of dried thyme
- 1/2 tsp of smoked paprika
- 1/4 tsp of salt
- 1/4 tsp of black pepper
- 2 tbsp of olive oil
- 4 burger buns
- Lettuce, tomato, and any desired toppings for serving
Instructions

In a large bowl, combine the mushrooms, quinoa, bread crumbs, Parmesan cheese, onions, garlic, thyme, smoked paprika, salt, and black pepper. Mix well.

Form the mixture into 4 patties, pressing firmly to hold their shape.

Heat olive oil in a skillet over medium heat. Cook the patties for about 5 minutes on each side, or until golden brown and cooked through.

Toast the burger buns lightly.

Assemble the burgers by placing a patty on each bun, and top with lettuce, tomato, and any desired toppings.
