Ingredients
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- 200g mushrooms, sliced
- 2 medium potatoes, peeled and diced
- 1 cup water
- Salt to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Heat vegetable oil in a large pan over medium heat. Add the onions and cook until softened.

Add the garlic and ginger and cook for another minute.

Stir in the cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala. Cook for a minute to toast the spices.

Add the mushrooms and potatoes to the pan and stir to coat them with the spice mixture.

Pour in the water and season with salt. Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are cooked through.

Serve the mushroom and potato curry garnished with fresh cilantro. Serve with steamed rice or naan bread.
