How To Make Mushroom & Goat’s Cheese Calzone

Ingredients
- 1 lb pizza dough
- 8 oz mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 4 oz goat’s cheese, crumbled
- 1 tsp dried thyme
- Salt and pepper, to taste
- Flour, for dusting
Instructions

Preheat the oven to 400°F (200°C).

In a large pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until translucent.

Add the mushrooms to the pan and cook until they release their liquid and start to brown.

Season the mushrooms with salt, pepper, and dried thyme. Remove from heat and let cool slightly.

Divide the pizza dough into 4 equal portions and roll each portion into a ¼-inch thick circle on a lightly floured surface.

Spoon a generous amount of the mushroom mixture onto one half of each dough circle, leaving a border around the edges.

Sprinkle crumbled goat’s cheese over the mushrooms.

Fold the other half of the dough over the filling and press the edges together to seal. Crimp the edges with a fork to create a decorative edge.

Transfer the calzones to a baking sheet lined with parchment paper and brush the tops with olive oil.

Bake for 20-25 minutes, or until golden brown.
