How To Make Miso Mushroom & Halloumi Burgers

Ingredients
- 4 portobello mushrooms, stems removed
- 1 red onion, sliced
- 1 tbsp miso paste
- 2 tbsp soy sauce
- 1 tbsp olive oil
- 4 slices of halloumi cheese
- 4 burger buns
- 4 lettuce leaves
- 4 tomato slices
- 4 tbsp mayonnaise
Instructions

Preheat the grill or barbecue to medium-high heat.

In a small bowl, mix together the miso paste, soy sauce, and olive oil.

Brush the mushroom caps and halloumi slices with the miso mixture.

Grill the mushrooms and halloumi for 3-4 minutes on each side, until tender and slightly charred.

Toast the burger buns on the grill for a minute or until lightly browned.

Assemble the burgers by placing a grilled mushroom cap on the bottom half of each bun.

Top with a slice of halloumi, red onion, lettuce, tomato, and a tablespoon of mayonnaise.
