- 4 large carrots, peeled and grated
- 1/2 cup shelled pistachios, roughly chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions

In a large bowl, combine the grated carrots, chopped pistachios, crumbled feta cheese, and chopped mint leaves.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

Pour the dressing over the carrot mixture and toss until well combined.
