How To Make Minted Pea, Goat’s Cheese & Spinach Wraps

Ingredients
- 2 cups frozen peas
- 1/4 cup fresh mint leaves, chopped
- 4 tortilla wraps
- 1 cup crumbled goat’s cheese
- 2 cups fresh spinach leaves
- Salt and pepper to taste
Instructions

Cook the frozen peas in boiling water for 2-3 minutes until tender. Drain and transfer to a bowl.

Add the chopped mint leaves to the peas and mash together with a fork. Season with salt and pepper.

Spread the minted pea mixture onto each tortilla wrap.

Sprinkle crumbled goat’s cheese evenly over the pea mixture.

Place a handful of fresh spinach leaves on top of the cheese.

Roll up the wraps tightly and slice in half diagonally.

Serve as is or lightly toast the wraps in a panini press for a warm wrap.
