Ingredients

  • 8 small potatoes
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup sour cream
  • 2 tbsp capers, chopped
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Scrub the potatoes clean and pat them dry.

  3. Poke a few holes in each potato with a fork.

  4. Rub the potatoes with olive oil, salt, and black pepper.

  5. Place the potatoes on a baking sheet and bake for 30 minutes, or until they are tender when pierced with a fork.

  6. In a small bowl, mix together sour cream, capers, lemon juice, and fresh dill.

  7. Once the potatoes are cooked, slice them in half and serve with the caper soured cream dip.
