- 8 small potatoes
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ cup sour cream
- 2 tbsp capers, chopped
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
Instructions

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean and pat them dry.

Poke a few holes in each potato with a fork.

Rub the potatoes with olive oil, salt, and black pepper.

Place the potatoes on a baking sheet and bake for 30 minutes, or until they are tender when pierced with a fork.

In a small bowl, mix together sour cream, capers, lemon juice, and fresh dill.

Once the potatoes are cooked, slice them in half and serve with the caper soured cream dip.
