How To Make Mini Christmas Cake

Ingredients
- 1 cup all-purpose flour
- 1/4 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 cup milk
- 1/2 tsp baking powder
- 1/4 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/8 tsp ground ginger
- 1/4 cup mixed candied fruits and nuts (e.g. raisins, chopped cherries, chopped almonds)
Instructions

Preheat the oven to 350°F (175°C) and grease four mini cake molds.

In a mixing bowl, cream together the softened butter and sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, cloves, and ginger.

Gradually add the dry ingredients to the butter mixture, alternating with milk, beginning and ending with the dry ingredients.

Fold in the mixed candied fruits and nuts.

Divide the batter evenly among the greased cake molds.

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Remove the cakes from the oven and let them cool in the molds for a few minutes before transferring to a wire rack to cool completely.

Decorate with icing sugar, whipped cream, and additional candied fruits and nuts, if desired.
