How To Make Middle Eastern-style Cabbage Rolls

Ingredients
- 1 large cabbage
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/4 cup chopped fresh parsley
- 2 cups tomato sauce
- 1 cup chicken broth
- Salt and pepper, to taste
Instructions

Bring a large pot of water to a boil. Cut out the core of the cabbage and carefully separate the leaves. Blanch the leaves in the boiling water for about 5 minutes, then drain and set aside.

In a large bowl, combine the ground beef, cooked rice, onion, garlic, cumin, coriander, cinnamon, allspice, parsley, salt, and pepper. Mix well.

Take a cabbage leaf and place a spoonful of the meat mixture in the center. Fold the sides in and roll it up tightly. Repeat with the remaining leaves and filling.

In a large pot, spread a thin layer of tomato sauce on the bottom. Place the cabbage rolls, seam side down, in the pot. Pour the remaining tomato sauce and chicken broth over the rolls.

Bring the pot to a simmer, cover, and cook for about 1 hour, or until the cabbage rolls are tender and the flavors have melded together.
