How To Make Mexican Bean Chilli

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, diced
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, chopped green onions
Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until onion is translucent.

Add bell pepper and tomatoes, and cook for another 5 minutes.

Add black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, cumin, paprika, salt, and pepper to the pot. Stir well.

Bring the mixture to a boil, then reduce heat to low and let it simmer for 20-25 minutes, until the flavors have melded together and the chili has thickened.

Serve hot, with optional toppings if desired.
