Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cucumber, chopped
- 1 red bell pepper, chopped
- 1 small red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions

Rinse the quinoa thoroughly and cook it in vegetable broth according to package instructions.

In a large bowl, combine the cooked quinoa, cucumber, red bell pepper, red onion, cherry tomatoes, Kalamata olives, feta cheese, and parsley.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
