Ingredients
- 6 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup pomegranate arils
- 1/4 cup extra virgin olive oil
- 2 tablespoons pomegranate juice
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions

In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, mint, and pomegranate arils.

In a small bowl, whisk together the extra virgin olive oil, pomegranate juice, lemon juice, dried oregano, salt, and pepper.
