- 1 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons white wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions

In a large bowl, combine the courgettes, red onion, and cherry tomatoes.

In a small bowl, whisk together the olive oil, lemon juice, white wine vinegar, dried oregano, salt, and pepper.
