Ingredients
- 1 pound fresh spinach leaves
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup bread crumbs
- 2 eggs
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 1/4 cup unsalted butter
- 1/4 cup grated Parmesan cheese, for serving
Instructions

Blanch the spinach leaves in boiling water for 2 minutes, then drain and squeeze out the excess water. Chop the spinach finely.

In a large bowl, combine the chopped spinach, ricotta cheese, grated Parmesan cheese, bread crumbs, eggs, nutmeg, salt, and pepper. Mix well.

Gradually add the flour to the spinach mixture, until a soft and sticky dough forms.

Bring a large pot of salted water to a boil. Drop spoonfuls of the spinach mixture into the boiling water, working in batches. Cook for about 5-7 minutes, or until the malfatti rise to the surface.

Using a slotted spoon, transfer the cooked malfatti to a serving dish.

In a separate pan, melt the butter over medium heat until it starts to brown. Pour the browned butter over the malfatti.

Sprinkle the malfatti with grated Parmesan cheese and serve hot.
