How To Make Little Spicy Veggie Pies

Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeno, seeded and diced
- 2 cloves of garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 cup cooked black beans, drained and rinsed
- 1 cup corn kernels
- 1/4 cup chopped fresh cilantro
- 1 package of pre-made pie crusts
- 1 egg, beaten
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add the onion, bell peppers, jalapeno, and garlic. Cook until softened, about 5 minutes.

Add chili powder, cumin, paprika, salt, and pepper to the skillet. Stir well to combine.

Add black beans, corn, and cilantro to the skillet. Stir again to combine.

Roll out the pre-made pie crusts on a lightly floured surface. Use a round cookie cutter or glass to cut out circles from the pie crusts.

Place a spoonful of the veggie filling onto one half of each pie crust circle. Fold over the other half to create a half-moon shape. Use a fork to seal the edges.

Place the veggie pies onto a baking sheet lined with parchment paper. Brush the tops of the pies with beaten egg.

Bake in the preheated oven for 20-25 minutes, or until the pies are golden brown.

Remove from the oven and let cool for a few minutes before serving.
