Ingredients
- 4 cups lettuce, torn
- 2 cups chicory, chopped
- 1 apple, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup toasted walnuts
- 1/4 cup dried cranberries
- 2 tbsp poppy seeds
- For the dressing:
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions

In a large salad bowl, combine the lettuce, chicory, apple slices, red onion, walnuts, and dried cranberries.

In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper.
