Ingredients
- 1 cup of green lentils
- 1 apple, thinly sliced
- 1/2 cup of walnuts, chopped
- 1/4 cup of blue cheese, crumbled
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
- Salt and pepper to taste
Instructions

Cook the lentils according to package instructions. Drain and set aside to cool.

In a large bowl, combine the cooked lentils, apple slices, walnuts, and blue cheese.

In a separate small bowl, whisk the olive oil, lemon juice, salt, and pepper together.

Pour the dressing over the salad and toss gently to combine.
