How To Make Lentil Kofta with Orzo & Feta

Ingredients
- 1 cup red lentils
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder
- 1/4 cup chopped parsley
- 1/4 cup breadcrumbs
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 cup orzo pasta
- 1 cup vegetable broth
- 1 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions

Cook the lentils according to package instructions. Drain and set aside.

In a large bowl, combine the cooked lentils, onion, garlic, cumin, coriander, chili powder, parsley, breadcrumbs, olive oil, salt, and pepper. Mix well.

Shape the lentil mixture into small kofta balls and place them on a baking sheet lined with parchment paper.

Bake the kofta in a preheated oven at 400°F (200°C) for 20-25 minutes or until golden brown.

In the meantime, cook the orzo pasta according to package instructions, using vegetable broth instead of water for added flavor.

Once the kofta and orzo are cooked, serve the kofta on top of the orzo pasta.

Sprinkle the crumbled feta cheese over the kofta and garnish with fresh parsley.
