Ingredients
- 1 cup of leftover cooked vegetables (such as carrots, zucchini, or squash)
- 1 orange (zest and juice)
- 1/2 cup of granulated sugar
- 1/2 cup of vegetable oil
- 2 eggs
- 1 cup of all-purpose flour
- 1 tsp of baking powder
- 1/2 tsp of salt
- Powdered sugar (for dusting)
Instructions

Preheat the oven to 350°F (180°C). Grease a 9-inch round cake pan.

In a large mixing bowl, mash the leftover cooked vegetables until smooth.

Add the orange zest, orange juice, granulated sugar, vegetable oil, and eggs to the bowl. Mix well until combined.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Once cooled, dust the top of the cake with powdered sugar.
