Ingredients
- 2 leeks, sliced
- 2 tbsp butter
- 2 cloves of garlic, minced
- 4 cups potatoes, peeled and diced
- 1 cup grated cheddar cheese
- 1/2 cup milk
- 2 eggs
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, melt the butter over medium heat. Add the leeks and garlic and sauté until softened.

In a separate pot, boil the potatoes until tender. Drain and set aside.

In a large bowl, whisk together the eggs, milk, salt, and pepper.

In a greased pie dish, layer the cooked leeks, potatoes, and cheese. Pour the egg mixture on top.

Bake in the preheated oven for 30-35 minutes, or until the top is golden and the filling is set.

Allow to cool for a few minutes before serving.
