How To Make Layered Squash, Barley & Spinach Pie

Ingredients
- 1 small butternut squash, peeled and sliced
- 1 cup barley, cooked
- 2 cups fresh spinach
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup grated cheese (such as cheddar or mozzarella)
- 2 tablespoons olive oil
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until fragrant and translucent.

Add the sliced butternut squash to the skillet and cook until tender, about 10 minutes. Season with dried thyme, salt, and black pepper.

In a baking dish, layer half of the cooked barley on the bottom. Then add a layer of spinach followed by a layer of the sautéed squash mixture. Repeat the layers.

Sprinkle the grated cheese evenly over the top of the pie.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Allow the pie to cool for a few minutes before slicing and serving.
