How To Make Indian Koftas with Mint Yogurt & Flatbreads

Ingredients
- For the koftas:
- 2 medium potatoes, boiled and mashed
- 1 cup mixed vegetables (carrots, peas, corn), boiled and mashed
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 green chili, finely chopped
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- Oil for frying
- For the mint yogurt:
- 1 cup yogurt
- 1/4 cup fresh mint leaves, finely chopped
- Salt to taste
- For the flatbreads:
- 2 cups whole wheat flour
- Water as needed
- Salt to taste
- Oil for cooking
Instructions

In a large bowl, combine the mashed potatoes, mashed vegetables, chopped onion, minced garlic, grated ginger, green chili, cumin powder, coriander powder, garam masala, and salt. Mix well until everything is well combined.

Shape the mixture into small balls and flatten them slightly. Heat oil in a pan and fry the koftas until golden brown and crispy. Remove them from the pan and set aside.

In a separate bowl, whisk the yogurt until smooth. Add the chopped mint leaves and salt. Mix well to combine.

To make the flatbreads, combine the whole wheat flour, water, and salt in a bowl. Knead until you have a smooth and soft dough. Divide the dough into small portions and roll them out into round flatbreads.

Heat a pan over medium heat and cook the flatbreads on both sides until golden brown. Brush them with oil while cooking.

Serve the koftas with mint yogurt and flatbreads.
