Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 can (14 oz) black beans, drained and rinsed
- 1 cup vegetable broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions

Heat olive oil in a large pot over medium heat. Add onions, garlic, bell pepper, carrot, and zucchini. Cook until vegetables are tender, about 5 minutes.

Add diced tomatoes, kidney beans, black beans, vegetable broth, chili powder, cumin, salt, and pepper. Stir well to combine.

Bring the chili to a boil, then reduce heat to low. Simmer for 20-25 minutes, stirring occasionally.
