Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, bell pepper, carrot, and zucchini. Cook until vegetables are tender, about 5 minutes.

  2. Add diced tomatoes, kidney beans, black beans, vegetable broth, chili powder, cumin, salt, and pepper. Stir well to combine.

  3. Bring the chili to a boil, then reduce heat to low. Simmer for 20-25 minutes, stirring occasionally.

  4. Serve hot, topped with your favorite toppings such as shredded cheese, sour cream, and chopped cilantro.
