How To Make Hot Dressed Sweet Potato, Fennel & Feta Parcels

Ingredients
- 2 large sweet potatoes, peeled and cut into small cubes
- 1 fennel bulb, thinly sliced
- 200g feta cheese, crumbled
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 sheets of filo pastry
- 2 tbsp melted butter
Instructions

Preheat the oven to 200°C (400°F).

In a large bowl, toss the sweet potato cubes and fennel slices with olive oil, dried thyme, salt, and pepper.

Spread the sweet potato and fennel mixture on a baking sheet and roast in the preheated oven for 20-25 minutes, or until golden and tender.

Remove from the oven and let cool slightly. Mix in the crumbled feta cheese.

Lay out one sheet of filo pastry and brush it lightly with melted butter. Place another sheet on top and repeat the process until you have four layers.

Cut the filo pastry into four equal squares.

Spoon the sweet potato, fennel, and feta mixture onto the center of each square.

Fold the corners of the filo pastry up and over the filling, creating a parcel.

Place the parcels on a baking sheet lined with parchment paper and brush the tops with melted butter.

Bake in the oven for 10-12 minutes, or until the filo pastry is golden and crispy.
