- 4 large potatoes, cut into chunks
- 3 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, combine the potatoes, olive oil, rosemary, thyme, garlic powder, salt, and pepper. Toss until the potatoes are evenly coated.

Transfer the potatoes to a baking sheet and spread them out in a single layer.

Roast in the preheated oven for 40-45 minutes, flipping halfway through, until the potatoes are golden and crispy.
